Recipes

These are all recipes that I have made up.  I call them "creations" :)

Salsa
- one large can of diced tomatoes in tomato sauce
- one yellow onion (diced)
- 3 jalapenos (chopped)
- salt (I never measure this, maybe a teaspoon?)

Add all ingredients in a blender and mix until smooth. 


Grilled Chicken With Avocados and Salsa
- 3 boneless skinless chicken breasts
- 2 avocados (chopped)
- salsa
- Mrs. Dash chicken seasoning
- garlic salt

Grill chicken on bbq, season with Mrs. Dash Chicken Seasoning and garlic salt.  When the chicken is cooked, cut it into bite sized pieces and top with avocados and salsa.  SUPER YUMMY!


Italian Chicken With Pasta and Asparagus
- 3 boneless skinless chicken breasts
- 1 box bow tie or penne pasta
- 15-20 pieces of asparagus
- garlic salt
- onion powder
- Italian seasoning (the kind by the spices at the store, not the salad dressing)
- extra virgin olive oil

Grill or bake chicken, season with garlic salt, onion powder and Italian seasoning.  When the chicken is cooked, cut it into bite sized pieces.  Steam the asparagus until it is soft, then cut it into small pieces.  Prepare the pasta as directed on the box.  Drain the pasta and put it in a big bowl.  Drizzle with olive oil and add Italian seasoning.  Add the chicken and asparagus to the pasta and mix it up.  DELICIOUS.


Chicken Marinara
-3 boneless skinless chicken breasts
-1 jar of light sugar free Ragu
-6 slices of Swiss cheese
-garlic salt
-onion powder
- Italian seasoning (the kind by the spices at the store, not the salad dressing)

In a baking dish (I use corningware with a glass lid) spread marinara on the bottom of the dish, so it is completely covered.  Sprinkle a little Italian seasoning, garlic salt and onion powder over the marinara.  Place the chicken breasts on top of the marinara.  Sprinkle the Italian seasoning, garlic salt and onion powder over the chicken breasts then coat them with marinara.  Top with Swiss cheese (2 pieces per breast).  Cover and bake on 375 for 40 minutes. *This dish is also really good without the cheese if you have a dairy allergy.  My brother also recommends using soy cheese or Daiya cheese :)


Crock Pot Shredded Chicken with Taco Seasoning
-3 frozen boneless skinless chicken breasts
-1 packet of taco seasoning (I use McCormick)
-2/3 cup of water

Place the chicken in the crock pot, evenly spread out.  Mix the packet of taco seasoning with 2/3 cup of water and pour over chicken.  Cook on high for 4 hours.  After about 2 hours, I flip the chicken over.  When chicken is done, shred it using 2 forks and EAT!
